There's nothing that makes people smile (and whip out their cameras) more than a big, beautiful rainbow salad. The sunshine comes from the Golden Tahini. We love these particular ingredients together - celery, walnuts, and dates, oh my! But play around and use what you have, just remember ROYGBIV.
Chef Tip: The only work here is the chopping. Think about your presentation: even, bite-sized pieces are the key to success.
1 cup of toasted walnuts
3 large stalks of celery, cut into ½inch slices
2 yellow bell peppers, cut into bite sized pieces
2 carrots, cut into ½ inch slices
1 pint of cherry tomatoes, cut in half
About 10 dates, cut in half, pits removed
1/2 red onion, thinly sliced and pickled in red wine vinegar
Arrange all the salad ingredients on a large platter, starting with the walnuts at one end, and finishing with the dates at the other. Drizzle with Golden Tahini
