Laura Silverman of The Outside Institute leads a hands-on workshop on crafting bitters from wild-foraged, locally-grown, and exotic botanicals, many of them with healing properties. Featured elements include barberry, angelica and sassafras roots, cinchona bark, and hops flowers. There will be an opportunity to taste a wide range of bitters, both with soda and in cocktails and participants will craft their own blend to bring home along with an amber glass dispensing bottle.

Laura Silverman is the founding naturalist of The Outside Institute. A desire to share her passions for flora, fauna, and fungi inspired this venture that connects people with the healing and transformative powers of nature. In addition to leading plant walks and workshops, she creates trail snacks, cocktails, and wild feasts with ingredients that tell the story of our region.

All classes are hands-on and end with a seated meal unless otherwise stated. Wine is served in class.
