Description

In this class we skip snails and steak tartare to explore the French approach to vegetarian eating taught by Klancy Miller, a NYC-based cookbook author and Francophile flexitarian. The menu will feature anything from spicy carrot soup and veggie-stuffed casserole alongside seasonal riffs on classics like the famous Niçoise salad—without anchovies and tuna—and a fall fruit crumble for dessert.

Klancy Miller is a cookbook author and pastry chef fascinated by all things French. After working in international development in French Polynesia, she earned a diplôme de pâtisserie from Le Cordon Bleu Paris and apprenticed in the pastry kitchen at the Michelin-starred restaurant Taillevent. She later joined Le Cordon Bleu’s recipe development team, during which time she was also featured on the Food Network. Now based in New York, she continues to write about food and has been a commentator on the Cooking Channel and a contributor to Bon Appétit, Cherry Bombe, Food 52 and The Washington Post. She is the author of Cooking Solo: The Fun of Cooking For Yourself.
