Harissa Cauliflower and Black Bean Casserole

Cook time: 15 minutes

Serves 6

 What You Need:

  • Olive oil
  • 12oz of cauliflower rice
  • Salt
  • 1 can of black beans (15.5 oz) 
  • ½ cup tomato sauce
  • 1 pouch of Haven’s Kitchen Zippy Chili Harissa
  • 1 cup Vegan cheese shreds
  • ½ cup chopped parsley

How to Make It:

  1. Heat a large, ovenproof skillet on high. Add a glug of oil to coat the pan. Add cauliflower rice, a pinch of salt, and cook till softened, stirring occasionally, about 3 minutes
  1. Add beans and combine, then add tomato sauce and about ½ pouch of Harissa. Cook all together, occasionally stirring for about 3 more minutes until the ingredients are combined and simmering
  1. Cover with cheese shreds and broil until cheese has melted and crisps, about 5 minutes. Garnish with parsley
