To many Americans, Mexican food is just tacos, enchiladas, and quesadillas. But in actuality, Mexican cuisine is rich, dynamic and filled with lesser-known favorites like mole, braised meats, stews and tamales. This class will focus on one of our favorite dishes—tamales. Our instructor Zoe Maya Jones, who grew up in Mexico, will explore regional varieties of tamales, and in the process, will also make salsas to accompany the tamales.

These dishes fall into a category of Mexican fare that has a depth of flavor and textural complexity that will renew your appreciation of this complex cuisine. As always, we will serve wine with this class.
