If you’ve never charred corn in a skillet before, we’re about to change your world. The natural sugars in corn caramelize when they hit the hot pan to create layers of flavor, pairing perfectly with Tangy BBQ marinated chicken thighs. Fresh lime and cilantro elevate your palate with a pop of brightness.
Chef Tip: Don’t be afraid of getting the pan nice and hot to char your corn and sear the chicken breast. A cast-iron skillet works beautifully here.
3-4 boneless chicken thighs
2 cups of frozen corn kernels
Salt
Cooking oil
1 lime
3-4 sprigs of fresh cilantro
In a large bowl, squeeze half of the Tangy BBQ sauce pouch onto the chicken and lightly toss with salt. Let it marinate for about 30 minutes
Heat a skillet or a grill over medium-high heat. Add the corn kernels to the dry skillet and cook until the corn is charred. Set aside
Add a glug of oil to the same skillet and once the oil shimmers, add the marinated chicken. Cook, without disturbing, for 5 minutes on each side until the sauce caramelizes and the chicken registers an internal temperature of 165°F
Toss the corn with the juice of the lime and salt to taste. Before serving, add the charred corn back to the skillet making a bed for the chicken to rest on. Garnish it with cilantro and serve immediately
