BBQ Roasted Spatchcocked Chicken and Potatoes

Spatchcocking chicken cuts out a lot of cooking time and makes for a more evenly cooked, juicier bird. Add crispy potatoes and BBQ sauce, and you've got a year-round weeknight dinner that has everyone licking their fingers and asking for more.

Chef's Tip: Most grocery store butchers will spatchcock the chicken for you (just ask!). But if you want to master the skill on your own, we're here to support you!

Preheat your oven to 425°F

Step 2

If you are spatchcocking your chicken: Using kitchen shears, cut the backbone out of the chicken, starting from the back, and working toward the front. Flip the chicken over so that it is skin-side up, and press down hard on the breastbone to flatten the chicken out

Step 3

Rub the chicken with olive oil, and season with salt, then lay on a sheet pan lined with a rack and roast for 25 minutes

Step 4

Meanwhile, in a large bowl, toss the potatoes with a drizzle of olive oil, a hefty pinch of salt, and about ¼ pouch of Tangy BBQ sauce. Remove the chicken from the oven and scatter the potatoes around it. Squeeze another ¼ pouch of Tangy BBQ sauce on the chicken and return to the oven for another 30 minutes or so, until the internal temperature of the chicken is 165°F and the potatoes are tender. Serve with more Tangy BBQ sauce!
