Bombay- Style "Frankie" Roll

A Frankie is the Northern Indian version of a burrito. It’s a quintessential Indian street food that features a kebab loaded with a variety of sauces, chutneys and slaws. We're using ground chicken for this recipe, but you can substitute with ground pork or lamb.

Chef Tip: Adding Chimichurri to the ground meat does all the flavoring and seasoning work. Adding Harissa to the sour cream makes a super savory sauce. Cooking the egg and roti together is one of the many gifts Neel, our Test Kitchen Manager has given us.


  • 2 lbs of ground chicken

  • Haven’s Kitchen Herby Chimichurri

  • Salt

  • Cooking oil

  • Haven's Kitchen Zippy Chili Harissa

  • 1 cup sour cream

  • 1 red onion, thinly sliced

  • 1 tomato, thinly sliced

  • A few springs of fresh cilantro, chopped

  • 4 Roti or Tortillas

  • 4 eggs

  • 1 cup of shredded lettuce



Preheat your oven to 250°F.


First prepare the meat: In a large bowl, combine the chicken, about a ¼ pouch of Chimichurri, and a pinch of salt; mix well. Make about 12, equal-looking portions and shape them into oblong, flat patties


Heat a large non-stick skillet over medium-high heat, and add a glug of oil. Once the oil shimmers, cook the patties on one side, undisturbed for about 3-4 minutes. Flip and repeat, working in batches until all the meat is cooked. Keep warm in the oven until ready to serve


Make the sauce by whisking about ¼ pouch of Harissa into the sour cream with a pinch of salt


Make the slaw by tossing the onions, tomatoes, and cilantro with a squeeze of Chimichurri and a pinch of salt


Make the egg roti by whisking the eggs in a bowl with a pinch of salt. Heat the skillet back up over medium heat and coat with a drizzle of oil. Pour enough of the beaten eggs to thinly cover the skillet and before the egg cooks all the way through, lay your roti flat on top. Flip the roti and cook until golden brown on the other side


Compose the Frankie by plating the egg roti with a dollop of the Harissa sauce, and add a spoonful of slaw down the center. Finish by topping with the chicken and shredded lettuce and roll the Frankie tight
