Chimichurri Impossible™ Lettuce Cups

We love a lettuce cup! It's a crisp and super fresh low-carb option that always satisfies. Using Impossible crumbles makes for a delicious vegan version of this classic combo, and the fresh crunchy garnishes add color, fiber, and flavor.

Chef Tip: This recipe is so easy, our only tip is to make it ASAP! Our Gingery Miso is also amazing in this recipe if you're looking to swap sauces.

Ingredients

  • 1 tbsp of cooking oil, we like avocado oil, olive oil, or grapeseed oil

  • 1, 12 oz package of Impossible™

  • Haven's Kitchen Herby Chimichurri

  • salt

  • 2 heads little gem lettuce, separated into individual leaves

  • ¼ small head of red cabbage, thinly sliced

  • 2 red, orange, or yellow bell peppers, thinly sliced

  • 1 avocado, thinly sliced

  • ½ bunch fresh parsley, chopped

Steps

STEP 2

Add about ½ pouch of the Chimichurri, a pinch of salt, and cook for another 2-3 minutes to brown.

STEP 3

Fill the lettuce cups with the Impossible™ and garnish with cabbage, peppers, avocado, and parsley. Drizzle on some more Chimichurri and enjoy!
