Gingery Miso Butter Mushrooms

We all know butter and mushrooms go together, and miso and mushrooms go together, so this recipe is truly greater than the sum of its parts. Butter and miso are the perfect blanket of creaminess that takes savory mushrooms to new levels, and the pop of lime zest add a tangy, citrusy hit at the end.

Chef Tip: Mushrooms contain lots of water, so you want to give them space to get a good crispy sear, otherwise they’ll steam and get super soft. Sear them by adding to the pan in batches, pushing the browned crispy ones to the edges of the pan and continuously adding until everything is nice and crispy.

STEP 1

In a large sauté pan, heat a glug of oil. Add mushrooms (in batches if necessary) and sauté on medium-high heat till they’re all crispy – letting them sear and not tossing too much. Give them a good pinch of salt.

STEP 2

Once the mushrooms are all crisp, turn off the stove and add the butter. Add a squeeze of gingery miso and toss to combine. Toss with parsley and finish with lime zest.
