Harissa Cauliflower and Black bean Casserole

This yummy casserole is a comforting and hearty weeknight dinner. The warming spices in our Harissa complement the black beans and cauliflower rice, while the broiled vegan cheese makes a lovely, lacy cheese crisp on top.

You can use store-bought cauliflower rice, or make your own by roughly chopping a head of cauliflower before pulsing in a food processor until you reach the texture of brown rice.

STEP 1

Heat a large, ovenproof skillet on high. Add a glug of oil to coat the pan. Add cauliflower rice, a pinch of salt, and cook till softened, stirring occasionally, about 3 minutes

STEP 2

Add beans and combine, then add tomato sauce and about ½ pouch of Harissa. Cook all together, occasionally stirring for about 3 more minutes until the ingredients are combined and simmering

STEP 3

Cover with cheese shreds and broil until cheese is melted and crisp, about 5 minutes. Garnish with parsley
