Harissa Kofta and Veggies in Broth

Ground turkey (or chicken!) is a nice, lean protein that you can take in a lot of different directions. We love to make this kofta (spiced meatball) and serve them in a gently spiced chicken broth. Kind of like a soup, but less about the liquid and more about the meat. You can totally add pasta if you’re feeling it.

Chef Tip:Forming the kofta into flatter, more oblong balls (as opposed to perfectly round ones) helps them cook a bit quicker and gives you more surface area to get a nice sear. You can make these GF if you leave out the breadcrumbs, but the egg/crumb combination makes for lighter, fluffier kofta.

Ingredients

  • 1lb ground turkey or chicken

  • Haven’s Kitchen Zippy Chili Harissa

  • 1/4 cup breadcrumbs

  • 1 large egg

  • Salt

  • Olive oil

  • 1 medium yellow onion, thinly sliced

  • 3 green zucchini and/or yellow squash cut into bite-sized pieces

  • 8 cups chicken broth

  • 1 bunch of Swiss chard, chopped

Steps

STEP 1

Combine the ground meat, about 1/4 pouch of Harissa, and the breadcrumbs in a large bowl. Add the egg and a pinch of salt and mix thoroughly but don’t overwork. Make 8-10 meatballs, as even as possible, shaping into a more oblong shape

STEP 2

Heat a glug of oil in a large stockpot or Dutch oven over medium-high heat until shimmering. Add the meatballs – giving them plenty of room in the pan; cook in batches if necessary. Cook for 6-8 minutes, turning to sear on all sides. Set the meatballs aside

STEP 3

Add another drizzle of oil to the pot, then add the onion, cooking for about 3 minutes until tender. Add the squash and zucchini and sauté for another 3 minutes until veggies are starting to soften. Add another ¼ pouch of Harissa, then the broth. Bring it to a simmer and cook for 10 minutes

STEP 4

Add back the chard and the meatballs and cook 5 minutes more. The meatballs should be cooked through and the chard should be bright green and tender
