Loaded Vegan BBQ Nachos

Tangy BBQ, black beans, melty cheese and crumbled Impossible all come together in these vegetarian, and indulgent nachos.

Chef's Tip: The more loaded, the better, just try to use thicker, heartier chips so they hold up! Treat nachos like a lasagna, make layers with the chips, fillings, cheese and sauce so each chip gets a helping of each.

Ingredients

  • Cooking oil

  • 1 large onion, chopped

  • [1, 12 oz package of Impossible™]

  • Haven's Kitchen Tangy BBQ Sauce

  • Salt

  • 1 can of black beans, drained and rinsed

  • 1 large bag of tortilla chips

  • 3 cups shredded vegan cheese, Mexican blend, or Cheddar

  • 3 jalapeño peppers, sliced thinly

  • 1 large tomato, or a bunch of cherry tomatoes, chopped

  • A handful of fresh cilantro, chopped

  • 1 avocado, chopped

Steps

Step 1

Preheat oven to 425°F

Step 2

Heat a large skillet over medium heat, then add oil. Once oil is shimmering, add onion, and cook until soft, about 5 minutes. Add Impossible™ and cook for another 4-5 minutes until it is completely browned

Step 3

Add about ¾ pouch of Tangy BBQ, black beans, and a pinch of salt. Cook for a few minutes until warmed through

Step 4

Spread the tortilla chips onto a parchment-lined baking sheet and top with the Impossible™ bean mixture. Cover with the shredded cheese and bake for about 6-8 minutes until cheese is melted and golden

Step 5

Drizzle on more Haven's Kitchen Tangy BBQ sauce and scatter the jalapeños, tomato, cilantro, and avocado over the top
