We call this technique "broasting" as it's a combination of braising and roasting. What you end up with is tender chicken, crispy skin and deep flavor. Oh, and the potatoes? Dreamy.
Chef's Tip: Chicken thighs are as no-fail as chicken gets. Make sure your oven is hot and your chicken is tempered. If you're cooking to impress, add some chopped cilantro or parsley before serving.
8 chicken thighs, bone-in, skin-on
1 lb baby potatoes
¼ cup honey
Salt
Olive oil
Preheat oven to 425°F
Let the chicken temper for 10 minutes while you cut baby potatoes in half
In a small bowl, combine ½ pouch of Harissa with ¼ cup of honey, ½ cup of water, and a pinch of salt
Add the potatoes to a medium baking dish, then nuzzle the chicken thighs, skin side up, among the potatoes. Drizzle olive oil over the chicken, then pour the harissa marinade on top
Roast for about 45 minutes, until the internal temperature of the chicken is 165°F, and the skin is crispy
