Sexy Couscous

This couscous got its name because Ali made it for her family one night and the kids thought there was something "sexy" about it... the lucsious color, the dates and chopped pistachios, the warming spices of the Harissa? We're not sure, but it stuck.

You'll hear us talk a lot about oil, and here is a great example of a recipe that needs a high quality Extra Virgin Olive oil. This is not oil you would use to cook with - it's rich and thick and looks like actual olives. It'll add so much richness and depth to this recipe. Trust us, it's worth it.

Vegetarian Vegan Lunch/Dinner

Ingredients

  • 1 package (16oz) Israeli couscous, cooked according to directions

  • Olive oil

  • Haven's Kitchen Zippy Chili Harissa

  • ½ cup toasted pistachios, chopped

  • About 4-6 dried dates, pits removed, chopped or sliced

  • 1 shallot, chopped and sautéed until crispy

  • ½ bunch fresh parsley, chopped

  • Flaky salt

Steps

Step 1

After you've cooked your couscous, while it's still warm in the pot...

Step 2

Drizzle with olive oil and a hefty squeeze of Harissa (about 1/4 pouch). Then add your pistachios, dates, shallots, and parsley

Step 3

Serve garnished with more shallots, pistachios and flaky salt
