Summer squash gets the Tangy treatment in this easy recipe. Scoring the zucchini ensures the squash stays flat while it bakes, and the natural sugars in the BBQ sauce caramelize into a delicious, sticky glaze as it all cooks.
Chef Tip: Score the zucchini by using just the tip of a paring knife, and slicing 1/4-inch deep in diagonal strokes.
4 medium summer squash or zucchini
Olive oil
Lime
1 bunch Parsley
Prepare a grill for medium-high heat. Cut each squash in half lengthwise, then score the cut sides by cutting a criss-cross pattern with the tip of your knife
Toss squash with a glug of olive oil and brush with a squeeze of BBQ sauce
Grill squash cut side down for about 3 minutes. Brush on more BBQ sauce and flip. Repeat every minute or so for about 5 more minutes
Garnish the squash with the juice of the lime, more BBQ sauce, and parsley
