This is a hearty, versatile dinner that can be adapted to whatever meat or vegan meat you're feeling. You can also play around with the vegetables. The Tahini brings it all together and the flavors and textures just sing.
Chef Tip: It's important to cook the meatballs for a while before you add the cauliflower. They have different cooking times, so give the meat (or plant protein) a head start.
1 lb Meatless Ground Beef, ground turkey or beef
1/2 cup mixed herbs, rough chopped (Parsley, or Dill works!)
Olive oil
2 cups rainbow cauliflower, rough chopped
2 cups mixed greens
2 large pitas, cut in half
Salt
Preheat your oven to 425F
Mix the beef with ¼ of the mixed herbs and 1/3 pouch of Haven’s Kitchen Turmeric Tahini Sauce; season with salt. Form into uniform balls
Heat a large oven-safe pan over medium-high heat. Add a glug of oil and then sear your meatballs until browned and crisp. Add cauliflower and another drizzle of olive oil and toss gently to coat. Place pan in the oven for 20-25 minutes until meatballs are cooked through and cauliflower is golden brown
To assemble, fill your pita pockets with mixed greens, roasted cauliflower, and meatballs. Drizzle with lots of Haven’s Kitchen Turmeric Tahini Sauce and garnish with fresh herbs
