Gingery Miso  Cabbage & Eggplant

Cooking Time: 30-35 minutes

Serves 4

 What you Need:

  • 1 small head of cabbage, cut into thick wedges
  • 2 small eggplants, cut into large chunks
  • 2 Tbsp olive oil
  • 1 pouch Haven's Kitchen Gingery Miso
  • 2 Tbsp sesame seeds, toasted
  • 1/2 cup fresh cilantro, chopped
  • Salt and pepper, to taste

 How to Make It:

  1. Preheat your oven to 450 degrees Fahrenheit, with a rack in the middle
  2. Toss your veggies in olive oil and season with salt and pepper, to taste. Place in single layer on a parchment paper lined baking sheet
  3. Bake for 20 minutes until bottom of veggies are golden brown. Remove pan from oven and flip veggies over. Drizzle 1/2 a pouch of Haven's Kitchen Gingery Miso dressing on top. Return to oven for an additional 10-15 minutes until veggies are tender and golden
  4. Place veggies on serving platter and drizzle with remaining Haven's Kitchen Gingery Miso dressing
  5. Garnish with toasted sesame seeds and chopped fresh cilantro and enjoy!
