Chimichurri Chicken Thighs with Honey & Lime

How to Make it:

  1. Preheat your oven to 400°F. Lay the chicken out on a sheet pan lined with a rack. Rub chicken all over with salt and set aside
  2. In a small bowl, combine lime zest, lime juice, honey, and ½ pouch of Herby Chimichurri. Spoon the mixture equally on each thigh and coat them with sauce using the back of a spoon
  3. Roast for 40 min until chicken temps 165°F
  4. Serve the chicken by piling cooked white rice on a large platter. Then lay down the chicken. Pour all the juices in the pan over the chicken, scraping up any crispy bits. Drizzle with more Chimichurri and enjoy while hot!
