Chimichurri Roasted Asparagus with Eggs

Cooking Time: 20 minutes

Serves 4

What you Need:

  • 1 bunch asparagus, trimmed of tough bottoms
  • 2 Tbsp olive oil
  • 4 whole eggs
  • 1 pouch Haven's Kitchen Herby Chimichurri
  • 1/4 cup shaved parmesan cheese
  • Salt and pepper, to taste

How to Make It:

  1. Preheat oven to 425 degrees Fahrenheit with a baking sheet inside
  2. Toss asparagus in 1 tablespoon olive oil, 1/3 pouch of Haven's Kitchen Herby Chimichurri, and season with salt and pepper. Place on hot baking sheet and bake for 15-20 minutes flipping halfway, until golden brown
  3. Meanwhile, fry eggs in remaining olive oil, and season with salt and pepper
  4. Transfer cooked asparagus to platter and top with fried eggs. Drizzle more Haven's Kitchen Herby Chimichurri, and top with shaved parmesan cheese

Notes

  • To shave parmesan use a vegetable peeler to get delicate thin ribbons
