How to Make It:

  1. Preheat your oven to 400 degrees. Let your chicken temper out of the fridge while you slice the cabbage into to 1.5-inch thick slabs
  2. Add a glug of oil to a large, oven-safe skillet or shallow Dutch oven. Place cabbage slices in the pan to create a bed, cutting pieces as needed to get them to fit
  3. Pat your chicken dry and rub it and the cabbage with 1/2 pouch of Chimichurri, and about a tbsp of ghee or olive oil, then place the chicken, breast side-up, on the cabbage. Roast for 60-75 minutes, basting occasionally, until the thickest part of the breast reads 165 degrees
