Cooking 101
We know that home cooking is good for you and the environment, and our mission is to help you feel great in your own kitchen. We do this through high-quality, flavor-packed products and cooking content that is educational and fun.
Aioli is a European condiment, similar to mayonnaise, made by emulsifying garlic with egg yolks and oil. Our aioli is vegan, thanks to the power of aquafaba (chickpea water!), emulsified with high-oleic sunflower oil and blended with flavorful ingredients, like chilis, citrus, and spices.
Aquafaba is the thick, starchy liquid left over from cooking chickpeas or other legumes. It's become popular as a vegan egg substitute and emulsifies well with a neutral flavor. Unlike eggs, aquafaba has no cholesterol or saturated fat. It is also an upcycled product with a lower environmental footprint than eggs.
We understand that there is a lot of confusion around oils these days and are proud of our choice of high-oleic sunflower oil for our aiolis. High-oleic sunflower oil contains a high amount of monounsaturated fats (oleic acid), is more sustainable and less prone to rancidity than avocado oil, and has a more neutral taste than olive oil.
We do not recommend freezing them.
Our aiolis are best used before the Best By date printed on the pouch. Once opened, please refrigerate.
The aiolis are shelf-stable and can be stored in the pantry until you open them. Once opened, they must be refrigerated.

We make our aioli at a B-Corp-certified food manufacturer in North Carolina.
Using organic ingredients would double the price of the aioli, so we decided to prioritize high-oleic sunflower oil, non-GMO ingredients, and Kosher, Keto, and Vegan certifications.
The Zesty Jalapeño contains Cilantro Extract and Lime Oil Essence. The Sunshine Chili contains Orange Oil Essence and Lemon Oil Essence.
Our Chili Bang Bang Aioli contains sesame and soy. Our other aiolis do not contain eggs, milk, peanuts, tree nuts, crustacean/shellfish, fish, soy, or wheat.
Our fresh sauces are cold-processed and must remain refrigerated from the time they’re produced through consumption. Our aioli is shelf-stable, and you’ll find it in the condiment section of your store. They can be stored in your pantry until you open them. We like to use the sauces as marinades and finishing sauces and use the aioli more like a traditional condiment — spread, dip, and drizzle like ketchup or mayo!
The pouch has about 13 servings in it.
We like to squeeze our aioli on top of cooked food, but it is not a cooking sauce.
Yes! However, we make them in a facility that also produces products with gluten.

Yes! Our pouches are 100% recyclable through our partnership with TerraCycle. Even better news, pouches are a more sustainable packaging option than glass, releasing significantly fewer carbon emissions in production and transportation.
All of our sauces are certified parve kosher.
While we recommend consuming the sauces fresh, it is safe to freeze. Color and consistency might be slightly different when thawed but they're still delicious and taste how intended. Always shake well!
While most of our sauces are free of soy products, the Gingery Miso and Nutty Lemongrass contain Non-GMO soy.
We are committed to only non-GMO ingredients. All of our sauces are Non-GMO Project verified.
We guarantee all sauce orders shipped will have an expiration date no less than 30 days from your delivery date. Once you open a pouch of sauce, we suggest consuming within 7 days. All sauces must be kept refrigerated and consumed by the best by date.

Our sauces are the answer to years of our cooking school students asking why they couldn’t buy the delicious drizzles and dressings they were learning to make it class. Why wasn’t there fresh sauce at the grocery store? Why hadn’t they heard of these delicious sauces from around the globe? Why did store-bought sauce have so much added sugar and salt? Those questions inspired us to make our own product line, and a few years later our pouches can be found in over 2000 stores across the US.
Part of the reason our sauces tastes so different from shelf-stable sauces is because we use pressure (HPP) to kill bacteria and stop oxidation, rather than excessive heat or chemical preservatives.
Part of our mission includes expanding home cooks’ horizons and helping them familiarize with flavors and ingredients from around the world. While we try to stay true to the sauce you would eat in its region of origin, we are aware that making sauce on a large scale (however small-batch) makes it nearly impossible to replicate a homemade recipe. So our flavors come from around the world, but we recognize that our sauces are interpretations.

We make and package our sauces in Rochester, NY.
Using organic ingredients would increase the price of sauce to a range the average consumer could not afford. We decided to prioritize gluten-free, Non-GMO, Kosher, and Vegan sauces. Allowing us to offer healthy, nutritious sauces at a fair price.
We use olive oil, which can get cloudy in cool temperatures. Let it sit out of the fridge for a few minutes before using, then shake and squeeze.
Our sauces are free of chemical preservatives.
Our company mission includes putting resources toward fighting inequity and hunger, especially in communities that have given us the flavors and ingredients we are so proud to feature. To that end, we donate 1% of gross profit to community-based anti-hunger, anti-racist organizations making sustainable and structural change. We will publish an impact report at the end of the year elaborating on our non-profit partners and their work.
NYC is our home. And although we no longer operate a cafe and cooking school, NYC will always be our stomping ground.

We're still pretty new at this online stuff. So we're only available in the US at the moment.
We ship via UPS and therefore cannot deliver to PO boxes. Please provide a home or work address instead.
Our orders generally ship via UPS within 5 business days. Orders ship Monday through Wednesday. Any orders placed Thursday through Sunday will be shipped out the following Monday.
Free shipping on any order over $50. For orders under $50, shipping is $9.99.
Due to the nature of our sauces being fresh, all sauces have a shelf life of 120 days. While we try our best to provide sauces at the peak of freshness, we guarantee all sauce orders shipped will have an expiration date no less than 30 days from your order date. If your sauce expiration is within the 30 day mark, please email us at [email protected], and we will make it right!
You will receive tracking information via your confirmation email. If your package hasn’t arrived, we recommend checking with UPS first. Still having trouble? Email us at [email protected], and we'll do our best to help you out. We are not responsible for packages lost by the carrier or shipped to an incorrect address.
Dry ice keeps your food cold safely while it travels. If you don’t have any dry ice left in your box, it has dissipated in transit and you can disregard these instructions. Please do not touch the dry ice with your bare hands. Prolonged contact with skin can cause injury. Always handle dry ice with care, using gloves or a folded towel. When disposing of this product, please place the dry ice somewhere well-ventilated where it can sublime safely. Keep away from children and pets!
