This ultra-easy, fresh, and bright roasted chicken is so versatile. You can serve it with our Sexy Cous Cous for something a bit heartier, or over a bed of greens and spring veggies for the ultimate market salad.
Chef Tip: Roasting the chicken thighs on a rack helps get them super crispy.

Olive oil

1 lime cut into thin slices
3-4 sprigs of mint
Preheat your oven to 425°F. Temper the chicken, then toss it with ½ a pouch of the Edamame Green Goddess, a glug of olive oil and a pinch of salt
Lay the chicken out on a baking sheet lined with a rack. Add the lime slices, and roast for about 35-40 minutes until the chicken registers an internal temperature of 165°F
Transfer the roasted chicken and lime on to a serving plate and squeeze another ¼ pouch of the Edamame Green Goddess over the chicken. Garnish with the mint
