This super easy wrap is gluten-free, packed with nutrition, and so so refreshing and tasty. Think of it like a hearty salad that you can eat with one hand, no tools needed!
Quickly dipping the collards in boiling water makes them flexible, plus the bright green color makes these wraps look so inviting.
2 thinly sliced chicken breasts
Salt
Olive oil
4-5 large leaves of collard greens, dipped in boiling water
1/2 an English cucumber, cut into batons
1 green pepper, cut into long thin strips
In a medium bowl, toss the chicken with ¼ pouch of the Edamame Green Goddess and a pinch of salt
Heat a glug of oil in a skillet or a grill over medium-high heat and cook the chicken for about 2-3 minutes on each side or until it is cooked through. Set the chicken aside and cut it into thin, long strips
To assemble your wraps, lay the collard green leaf open on a flat surface and Squeeze some of the Edamame Green Goddess on the leaf.
Place the chicken, cucumbers and green pepper in the center of the leaf. Fold from the bottom, wrapping the leaf over the stuffing. Then fold in the sides and roll to create a little package. Repeat with the remaining leaves and serve immediately with some more Edamame Green Goddess
