We love an easy side that’s full of texture and fresh flavors! This easy sweet potato recipe is sweet, herby, nutty, and fragrant all at once. Peanuts add crunch to the tender roasted potatoes, while lime and cilantro make the flavors in our Coconut Cashew sauce really pop.
Chef Tip: Roast the sweet potatoes whole, or half them lengthwise and roast with the cut side down for an extra layer of caramelized flavor.
4 sweet potatoes, cleaned & dried
Olive oil
Salt
Haven’s Kitchen Coconut Cashew
A small bunch cilantro, chopped
½ cup peanuts, toasted and chopped
1 lime
Preheat your oven to 425. Line a baking sheet with parchment paper
In a large bowl, toss the sweet potatoes with the olive oil, and a hefty pinch of salt
Roast the potatoes, in a single layer, for about 30-40 minutes, until they are tender and golden brown
Transfer the roasted sweet potatoes on to a serving plate and drizzle with ½ a pouch of the Coconut Cashew and garnish with the cilantro, peanuts, and the juice of a lime
