1 clove garlic, finely minced
3 anchovies
1 tablespoon capers
1 teaspoon Dijon mustard
¼ cup lemon juice
½ cup olive oil
Salt and pepper
½ cup grated parmesan
3 heads romaine, chopped
Finely chop the garlic, anchovies, and capers together until it forms a paste. Add the paste to a large salad bowl.
Whisk together the paste and lemon juice. Add 2-3 tablespoons of grated Parmesan and olive oil and whisk to emulsify.
Toss in romaine and more grated Parmesan and serve.
