Asparagus, cheese, and Herby Chimichurri come together in a quick, yet elegant, tart. Perfect for a light lunch!
Chef Tip: Store-bought puff pastry is a home cook's best friend! Homemade puff pastry is time-consuming, and the store-bought stuff is just as good.
1 sheet frozen puff pastry, thawed
1 bunch asparagus, trimmed
½ cup grated gruyere cheese
¼ cup grated parmesan cheese
¼ cup Dijon mustard
Roll puff pastry into a square. Transfer to a parchment-lined baking sheet.
Dock dough with a fork. Brush dijon all over puff pastry and drizzle over ½ pouch chimichurri. Sprinkle gruyere over puff pastry.
Line with asparagus spears and sprinkle parmesan over asparagus. Bake at 400 degrees 20-25 minutes. Slice and serve.
