Beet and Goat Cheese Pasta

A delicious creamy beet pasta that only has 7 ingredients, is easy to make, and makes the perfect Valentine's Day meal. You'll definitely want to snap some photos when you're done!

Chef Tip: Want to skip the beet roasting? You can often find already-cooked beets in your local supermarket!

Step 1

Preheat oven to 400 degrees F. Place beets on a sheet of aluminum foil, drizzle with olive oil, and season with salt. Wrap the beets in foil and roast for 40-50 minutes.  Allow beets to cool.

Step 2

When beets have cooled, peel off the skin and cut into quarters.

Step 3

Cook pasta according to package instructions. Reserve about 1 cup pasta water.

Step 4

In a blender or food processor, combine roasted beets, 3 oz. of goat cheese, zest, and juice of 1 lemon. Once combined, add pasta water to reach desired consistency.

Step 5

Toss together the cooked pasta and the beet sauce.

Step 6

In a bowl, crumble the remaining goat cheese and toss with Haven’s Kitchen Herby Chimichurri and zest of 1 lemon.

Step 7

Serve the herby goat cheese over the pasta and enjoy.
