Cod is a mellow, flaky fish that loves the herbs and capers in our Herby Chimichurri. This is a restaurant-quality meal disguised as an easy weeknight no-fail dinner.
Chef Tip: Ask the fishmonger for even pieces of fish. You can specify "center cut" so you don't get pieces of differing thickness and shapes.
4 evenly sized cod filets, about ½ lb each
2 lemons, cut into slices, reserving ends
Salt
Preheat oven to 400°F
Arrange the lemon slices on the bottom of a baking dish, then place the cod fillets on top. Drizzle with about ½ pouch of Chimichurri
Bake for 13 minutes, until the fish is cooked through. Add another squeeze of Chimichurri, salt to taste, and serve with the ends of the lemon
