The dough. The herby eggs. The crispy mushrooms. This is a breakfast for a crew the morning after a fun night.
Chef Tip: Honestly, buy pre-made pizza dough, no one's judging. And make sure you strain out all the water from the mozzarella. Or use grocery store shreds, that's fine!
Olive oil
1 ball Ready-made pizza dough, at room temp
2 balls of fresh mozzarella, strained and chopped
About 2 cups of sliced shiitake mushrooms, sautéed
4 eggs
Preheat oven to 500°F
Grease a deep baking dish with oil then stretch out the dough in the pan. Spread about 1/4 pouch of Chimichurri on the dough, then add the mozzarella and mushrooms
Bake for 10 minutes
With the back of a large spoon, make 4 divots in the pizza and crack the eggs into them
Bake for another 7-10 minutes, until the whites of the egg are opaque. Top with more Chimichurri if you'd like
