If you’re looking for a quick and easy glaze to jazz up your chicken routine, this recipe is it. Honey and lime zest thicken our Herby Chimichurri while adding tons of flavor. This recipe requires just a few minutes of prep, but tastes like a slow-cooked dream. Serve it with plain rice (or your favorite grain), use it to jazz up a taco salad, fajitas, or any of your favorite meal prep chicken recipes.
Chef Tip: After zesting, slice the lime into wedges and serve as a garnish with the chicken and rice.
4 bone-in chicken thighs, skin on
Salt
Zest and juice of 1 lime
2 tbsp honey
Cooked white rice, optional, for serving
Preheat your oven to 400°F. Lay the chicken out on a sheet pan lined with a rack. Rub chicken all over with salt and set aside
In a small bowl, combine lime zest, lime juice, honey, and ½ pouch of Herby Chimichurri. Spoon the mixture equally on each thigh and coat them with sauce using the back of a spoon
Roast chicken in the oven for 40 min, until the internal temperature reaches 165°F
Serve over white rice, or your favorite grain, salad, or bowl!
