Fried rice is a hit in every household, families love it, and it’s an easy way to get tons of veggies into your meal. This easy fried rice has greens and mushrooms for a variety of textures and flavors, along with some toasted sesame oil for an extra nutty taste.
Chef Tip: Using leftover rice is best for fried rice. It is a bit more dry than freshly made rice and the grains stay separated for nice, even pan frying.
Cooking oil
1 head of Bok choy, chopped
3 scallions, chopped
3-4 cups of leftover rice
About ¼ cup of toasted sesame oil
About ½ cup sauteed mushrooms
About ¼ cup toasted sesame seeds
Heat a large pan. Coat with oil, then saute the Bok choy and scallions til bright and tender.
Add rice, to warm it through, then the sesame oil and Gingery miso sauce. Stir to combine, then add in mushrooms and sesame seeds
