Gingery Miso Sweet Potato "Fries"

Crispy oven fries are one of our love languages. They’re easy, satisfying, and perfect for a quick after-school snack or impromptu gathering.

Chef Tip: Cornstarch gives these sweet potato oven fries an extra crispy texture. Give the fries lots of space on the sheet tray, or split them onto two trays if you’re making extra. The space between them is key so the heat can reach every edge and get crispy. If you have an air fryer, this recipe is a perfect candidate.

Ingredients

  • 2 medium-large sweet potatoes, cleaned, dried, and cut into thin matchsticks

  • 1 tbsp cornstarch

  • Neutral oil

  • 2 teaspoons sesame seeds

  • Salt

  • 1 pouch of 

  • 3 nori crisps or seaweed, cut into thin crisps

  • 2 scallions, dark green part only, sliced thin

Steps

STEP 1

Position oven rack in the upper third of the oven and preheat to 425

STEP 2

Toss the sweet potato with the cornstarch, and coat. Toss with a glug of oil, all the sesame seeds and a large pinch of salt. Lay them out, in a single layer on a baking sheet and bake 20 minutes until golden While still warm, toss the fries with a squeeze of Gingery Miso, the nori, and scallions and salt to taste.
