Take roasted radishes to the next level with our Herby Chimichurri. This quick and easy side dish brings out the natural mild sweetness of radishes and the savory char of scallions in just 30 minutes.
Chef Tip: To bring out the best flavors, marinate the radishes and scallions in the Herby Chimichurri for 10-15 minutes before roasting. This allows the vegetables to absorb more of the vibrant herbs and spices, resulting in an even more flavorful dish.
2 bunches radishes, cleaned and trimmed
4 whole scallions
Olive oil
Salt and pepper
Preheat oven to 425°F. Arrange radishes and whole scallions on a sheet pan, drizzle with olive oil, and season with salt and pepper.
Drizzle Herby Chimichurri over radishes and scallions, and toss to coat.
Roast until the radishes are tender and the scallions are lightly charred, 20-30 minutes. Serve.
