Crispy, herby chicken over a bed of wilted, melt in your mouth cabbage. A set it and forget it one-pan dinner that's deeply satisfying. Feel free to add a little butter as you rub the chicken with sauce... but no need!
Chef Tip: Tempering your chicken and making sure your oven is fully pre-heated is the key to a juicy, evenly-cooked bird. The cabbage will change the way you think about cabbage. For real.
1 (2lb) whole chicken
1 large head green cabbage
Olive oil
Preheat your oven to 350°F. Let your chicken temper out of the fridge while you slice the cabbage into 1 inch thick slabs
Add a glug of oil to a large, oven-safe skillet or shallow Dutch oven. Place cabbage slices in the pan to create a bed, cutting pieces as needed to get them to fit
Pat your chicken dry and rub it and the cabbage with 1/2 pouch of Chimichurri, and a drizzle of olive oil. Place the chicken, breast side up, on top of the cabbage
Roast for 60-75 minutes, basting occasionally, until the thickest part of the breast reads 165°F. Rest for 10 minutes before carving and serving
