Chimichurri Grilled Chicken Breasts

Two ingredient recipes are easy when one of them is our Chimi! Packed with herbs, lemon, and olive oil, it's everything you need for a grilling marinade. Butterflying the breasts is an easy way to make sure they cook quickly and evenly.

Chef Tip: Butterflying chicken breasts is a quick and easy technique. The breasts cook faster, the increased surface area ensures you get more char from the grill, and you can easily turn just a few breasts into more portions if you're feeding a crowd. Simply slice the breast through the middle, stopping about and inch before you reach the other side, then open it like a book.

Steps

STEP 1

Heat grill or grill pan. While it’s heating up, butterfly the chicken breasts by laying them down and cutting through the middle, horizontally, but not all the way, so they open like a book

STEP 2

Toss the cutlets with ½ pouch of Chimichurri

STEP 3

Grill for 4-5 minutes, undisturbed to get a nice char on one side, then flip and cook until the breast is tender but cooked through, another 3-4 minutes

STEP 4

Serve with more Chimichurri
