Chef's Tip: Don't overwork your burger. Once you've formed a patty, let it be. Don't flip it before it's ready to flip; you'll know it's ready when it releases easily from the bottom of the pan.
2 lbs ground beef (½ pound per burger)
Salt
Pepper
4 burger buns, sliced in half
Tomatoes, pickled onions, pickles, lettuce, and other fixings
Temper your meat for about 20-30 minutes while your grill or grill pan heats up
Shape the meat into 4 equal patties and season generously with salt and pepper. At the top of each burger, make a divot with your thumb
When the pan is super hot, cook your burgers, making sure not to flip until they release easily from the pan or grill. For medium burgers, you’ll cook for about 3-4 minutes per side.
Let the burgers rest for a minute or so while you toast your buns and add your toppings. Spread the Zesty Jalapeño Aioli on the bun and serve
