Chef Tip: When breading your chicken cutlets, press the breadcrumbs into the chicken, ensuring all those breadcrumbs stick tightly during the frying process.
2 eggs
Salt
3 cups panko breadcrumbs
4 chicken breasts, pounded thin
Olive oil
Bread and sandwich toppings of your choice
Whisk eggs and a pinch of salt in a shallow dish. Prepare another dish with breadcrumbs and a sheet pan lined with parchment to lay the chicken into once it’s breaded
First, dredge each breast in the egg mixture, then the breadcrumbs. Set aside on the sheet pan
Heat a large skillet over medium-high heat and add oil to cover the bottom
When a breadcrumb sizzles in the oil, cook the chicken until each side is golden and crisp and the chicken is cooked through
Toast your bread and make your sandwich, drizzling it with Sunshine Chili Aioli right before serving
