Chilled Cucumber Gazpacho

Ingredients

  • 4-5 seedless cucumbers, cut into chunks

  • 1½ cups plain Greek yogurt

  • 1 lemon

  • ½ a bunch Dill

  • Salt

  • 1 Tbsp. Black sesame seeds

  • Olive oil

Steps

STEP 1

Combine the cucumber, yogurt, lemon zest, lemon juice, dill, and salt to taste in a blender and blend until smooth

STEP 2

Garnish with a swirl of the Turmeric Tahini, sesame seeds, and a glug of oil. Serve Chilled

Glug

Many of our recipes also call for a glug of oil, often when heating oil in a pan or lightly dressing vegetables before roasting. We don’t expect you to pull out a measuring spoon every time you go to cook (but if you want to, that’s ok!) so we estimate a glug is about 2 tablespoons worth of oil.
