Not only is it super therapeutic, smashing cucumbers is actually a technique employed by many chefs to pack as much flavor as you can into this simple salad favorite. They stay crisp, along with the radishes, and have tons of nooks and crannies for Golden Tahini sauce to settle into. The fresh herbs and toasted sesame dish give a final flourish of flavor and freshness.
Chef Tip: Smashing the cucumbers helps to create more surface area for your delicious dressing to coat and season the salad. Simply use the flat side of your knife, with the sharp edge facing away from you, and give it a good whack with your fist before cutting. If this gives you pause, you can also place a clean towel over the cucumbers, and smash them lightly with a rolling pin (kids love helping with this part!), then remove the towel and cut it into bite-sized chunks.
1 bunch radishes, cleaned and ends trimmed
4 persian cucumbers, cleaned and ends trimmed
1/4 cup fresh mint and parsley, chopped
1 Tbsp toasted sesame seeds
Salt and pepper, to taste
Using the back of your knife, smash the cucumbers, and then cut them into big chunks; set aside in large mixing bowl.
Slice your radishes thinly and add to bowl with cucumbers. Season with salt and pepper.
