Enjoy a burst of flavor with this recipe! This easy, 30-minute recipe features seared salmon, herby rice, and our Sunshine Chili Aioli, perfect for a quick and delicious meal for two.
Chef Tip: For extra crispy salmon skin, make sure the pan is very hot before adding the fish, and press down gently on the salmon with a spatula to ensure even cooking.
1, 1-lb piece of salmon, skin on
Olive oil
Salt and pepper
2 cups cooked rice
Mixed herbs such as parsley, cilantro, basil, and dill, chopped
3 tablespoons butter
Pat salmon dry with paper towel, and season with salt and pepper. Heat a large pan over medium-high heat.
Season salmon with salt and pepper. Add olive oil to the pan when hot and then add salmon, flesh side down. Cook, flipping once, until the salmon is golden brown and full cooked.
Meanwhile, melt butter in a small saucepan. Add rice and herbs, tossing to coat.
Serve salmon over rice and top with Sunshine Chili Aioli.
