Mango, Avocado and Tahini Sheet Pan Salad

This super colorful sheet pan salad feels like we’ve transported to some tropical spa. The tangy fruits, creamy avocado, and crisp veggies look almost too pretty to eat, but once you dig in it’s hard to resist going in for many more bites.

Cheft Tip: Arrange the salad in an even layer on the sheet pan, starting with whole leaves of crisp lettuce and making sure every leaf gets a bit of each ingredient so you can serve it easily.

Ingredients

  • 3 heads of butter lettuce

  • 2 Mangoes, thinly sliced

  • 1 Avocado, thinly sliced

  • Jalapeno , thinly sliced

  • Handful of Pistachios

  • Handful of Microgreens

  • Handful of Shredded Carrots

  • Zest of 1 Lime

  • Honey Tahini Vinaigrette

Steps

STEP 1

Thoroughly wash your lettuce, then assemble the leaves on a sheet tray as your base layer

STEP 2

In a small bowl, combine honey, olive oil, and Golden Turmeric Tahini. Set aside

STEP 3

Lightly dress your lettuce with a small drizzle of vinaigrette

STEP 4

Next, arrange your mangoes and avocado slices over the lettuce

STEP 5

Then scatter your jalapenos, pistachios, microgreens, shredded carrots, and lime zest

STEP 6

Drizzle the salad with the remaining vinaigrette and for an extra pop of color and flavor, squeeze on a bit more Golden Turmeric Tahini. Enjoy!
