Indulge in the delicious flavors of our Mediterranean Baked Sweet Potatoes. These sweet potatoes are roasted to perfection and then topped with a combination of crispy chickpeas, cherry tomatoes, and our Golden Turmeric Tahini.
Chef Tip: For an extra crunch, ensure your chickpeas are thoroughly dried before roasting. This will help them achieve that delightful crispiness that contrasts beautifully with the creamy sweet potatoes.
2 large sweet potatoes
Salt and pepper
Olive oil
½ can chickpeas, drained and dried
1 cup cherry tomatoes, halved
Chopped parsley, for garnish
Preheat oven to 425°F. Roast sweet potatoes until soft, about 45 minutes.
Spread chickpeas out on a small sheet pan, drizzle with olive oil, and season with salt and pepper. Roast 20-25 minutes, until slightly crunchy.
Remove potatoes from the oven and let them cool slightly. Slice in half and, leaving the potatoes mostly intact, mash with the Golden Turmeric Tahini. Top with chickpeas, tomatoes, and parsley. Serve.
