Cooking 101
The flavors here all go perfectly together and it's a beautiful dish to serve for a small dinner party. The charred lamb, the golden tahini, and the pops of mint make it easy to impress. We like it over herby rice or sexy couscous.
Chef Tip: If you are making this for guests, we recommend cooking the lamb chops just until they get a nice sear on each side. Then remove them from the heat and when your friends arrive, put them in a preheated 400-degree oven for about 5 minutes. You don't want to start the night off annoyed that your friends are late to dinner and your chops are overcooked.
2 teaspoons fennel seeds
2 teaspoons cumin seeds
Salt
12 bone-in lamb chops
1 bunch fresh mint
With a spice blender or mortar and pestle, grind the fennel and cumin seeds. Add a pinch of salt and rub the spices all over the lamb chops
Heat a grill or grill pan over high and cook the lamb, searing one side, undisturbed for about 3 minutes, then flipping and searing the other side
Serve on a platter of Golden Tahini and garnished with mint sprigs
