Tomato and Cucumber Mediterranean Salad

Crispy cucumbers, juicy tomatoes, and fresh herbs reign supreme in this easy salad. Our Golden Tahini adds a gorgeous color and toasty richness to this anytime dish. Top with grilled Chimi chicken for a protein rich option, or pop it all into a pita for a filling lunch option.

Chef Tip: Even if you’re not cooking something, we always recommend cutting the ingredients into evenly sized pieces so you get a bit of everything in each bite, plus it makes for a satisfying presentation.

Ingredients

  • 3-5 medium tomatoes (any variety), large diced or halved

  • 1 large English cucumber or 6 Persian cucumbers, large quarters

  • 1 bunch fresh parsley leaves, chopped

  • Haven’s Kitchen Golden Turmeric Tahini

  • 2 tbsp extra virgin olive oil

  • 1/2 lemon, juiced

Steps

STEP 1

In a large salad bowl, add the tomatoes, cucumbers, and parsley. Sprinkle with 1 tsp salt and set aside for about 4 minutes, this allows the juices to be released.

STEP 2

Add the remaining ingredients and give the salad a gentle toss to coat. Refrigerate until ready to serve.
