Watermelon Feta Salad with Golden Tahini

Colorful, juicy, and bursting with flavor, this watermelon salad will be on your weekly rotation during watermelon season. Our creamy golden tahini is complemented by salty feta, crisp watermelon, and tangy cherry tomatoes for this fresh summer salad. For an extra hint of smoke, grill slabs of watermelon before cutting into cubes.

Chef Tip: To choose the perfect watermelon, our best tip is to pick something that feels heavy for its size, which means its crisp and full of water rather than dry or mealy. If you can, get it from a local farmer.

Ingredients

  • ½ a medium-sized watermelon, cubed

  • Handful of cherry tomatoes, halved

  • ½ block of feta cheese, sliced into 1-inch pieces

  • Handful of fresh mint leaves, chopped

  • ½ jalapeño, thinly sliced

  • Glug of olive oil

  • Black pepper, to taste

  • Haven’s Kitchen Golden Turmeric Tahini

  • Drizzle of honey, optional

Steps

STEP 1

In a large bowl combine cubed watermelon, tomatoes, feta, mint and jalapeño. Stir until ingredients are well combined. Drizzle lightly with a glug of olive oil and sprinkle of black pepper.

STEP 2

Finish with a light drizzle of Golden Turmeric Tahini and drizzle of honey, if using. Serve chilled.
