Creamy chicken is laced with garlic and green veggies in this fifteen minute keto meal.
Chef Tip: To make this a true 15 minute meal, take care to cut the chicken into small and even bite-sized pieces so they cook quickly and consistently.
Oil
4 skinless chicken breasts, cut into bite sized cubes
Salt
5-6 cloves of garlic, chopped
½ cup tomatoes, chopped
1 bunch asparagus, woody portion trimmed off and cut into bite sized pieces
2 cups baby spinach
½ cup Monterey jack cheese
½ cup cream cheese
3-4 sprigs of basil
Heat a glug of oil in a large skillet over medium high heat and add in the chicken breast and sauté stirring frequently. Add a pinch of salt and the garlic continue to sauté until the garlic starts to brown and turn aromatic
Squeeze in ½ a pouch of the Edamame Green Goddess and continue to toss
Add the tomatoes, asparagus, spinach, shredded cheese, and cream cheese and continue to cook for about 5 minutes or until the cheese has melted, and the chicken is cooked all the way through
Garnish with the basil leaves, squeeze another ¼ pouch of the Green Goddess and serve immediately
