This elegant salad makes the perfect lunch or dinner. Salmon, hard-boiled eggs, and tons of veggies make this a nutrient-packed meal!
Chef Tip: Niçoise salad is often served with tuna. Canned tuna works great here and is a time and money-saving alternative!
1 8-oz. Salmon filet, cooked and broken into pieces
Salt and pepper
3 cups arugula
½ cup cherry tomatoes, halved
3 hard-boiled eggs, halved
4 Persian cucumbers, sliced
1 bunch of radishes, halved
1 bag green beans, blanched
½ cup cooked baby potatoes, halved
Arrange arugula on a platter and top with remaining ingredients.
Season with salt and pepper and drizzle Edamame Green Goddess over salad. Serve.
