Jazz up your chicken breasts by stuffing them with a fresh and creamy feta mixture.
Chef Tip: 165˚F is the standard temperature for perfectly cooked chicken. Take out the guesswork by using a kitchen thermometer to test your chicken after cooking.
4 boneless skinless chicken breasts
1 Tbsp tomato paste
½ cup crumbled feta cheese
2 cloves garlic, minced
olive oil
salt
Preheat your air fryer to 360˚F. Place the chicken breasts on a cutting board or a work surface and lightly pound each chicken breast to an even thickness (not too thin). To butterfly the chicken breasts, hold a sharp knife along the long side of the chicken breast and slice about ¾ of the way through, being careful not to cut all the way through
In a mixing bowl combine ½ pouch of the Green Goddess Sauce, tomato paste, feta cheese, and garlic
Divide the filling between the four chicken breasts and seal the breasts with toothpicks. Rub the chicken breasts with the olive oil and salt. Transfer to the air fryer and cook for 18 to 23 minutes, or until the chicken registers an internal temperature of 165˚F In the meanwhile, toss the greens with ¼ pouch of the Edamame Green Goddess, salt, and lemon juice. Set it aside
Remove from the air fryer and serve immediately after 5 minutes of resting along with the creamy salad
