A flavorful tuna cucumber boat trend that's here to stay (or at least should)! So quick and easy, it's perfect for quick lunches and after-school snacks. Mix and match with your favorite Haven's Kitchen Aioli flavor.
Chef's Tip: Chill your cucumbers in the fridge before assembling. This adds a crispness to your cucumbers and ensure your tuna stays cool.
2 cans albacore tuna
½ cup cherry tomatoes, quartered
½ red onion, finely diced
Salt and pepper
1 large English cucumber
In a large bowl, combine tuna, tomatoes, and onion. Toss with Herby Yuzu to make a tuna salad and season with salt and pepper.
Split the cucumber in half lengthwise and cut each half in half again. Scoop out the seeds, creating a boat.
Serve tuna salad in the cucumber boats with more Herby Yuzu on top.
